II cantarim abia acum ca sa stabilim cu exactitate restul cantitatilor. Se aseaza cat mai frumos in ceva tavi. Se presara sarea si zaharul peste ei si ii lasam pana a doua zi la inmuiat. Din cand in cand putem sa ii amestecam.</span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">In primul rand ne ocupam de domnii morcovi si ii dam prin razatoarea mare. Apoi intr-un castron punem zaharul cu ulei , oua si zaharul vanilat pe care le amestecam bine. Separat amestecam faina cu praful de copt si scortisoara. Peste compozitia de oua adaugam cate putin faina pana se inglobeaza toata. Va iesii destul de tare , dar nu va panicati. La final adaugam si morcovul. Eu aici am amestecat cu mana ca sa fiu sigura ca iese bine. Intr-o tava de briose punem compozitia, cu tot cu hartia aceas speciala si dam la cuptorul incins pentru cca. 20-25 min. Temperatura aprox. 180 grade.</span><br />

Hidratarea gelatinei se poate face cu apa sau cu sucul din compotul fructelor. </span><span style="font-family: 'Trebuchet MS', sans-serif;">Peste gelatina topita adaugam 2-3 linguri de crema si amestecam. Turnam toata gelatina in bolul cu crema si amestecam usor. La sfarsit adaugam fructele, si putem amesteca in crema sau le putem pune alternativ cu crema.</span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">Din lipsa de timp am ajuns sa cumpar blatul de pandispan, dar se poate folosii orice blat se doreste cu precizarea ca trebuie sa fie pentru dimensiunile dorite. Eu am avut foi dreptunghiulare de cca: 40x 25cm</span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">Crema este tip ganache, preparata din frisca lichida si ciocolata. Ciocolata se pune la topit impreuna cu frisca lichida. Am folosit 500 ml. frisca pt crema. Se omogenizeaza bine si se lasa la racit complet. Dupa ce este foarte bine racita se bate cu mixerul pana devine tare. </span><br />
<br />
<span style="font-family: 'Trebuchet MS', sans-serif;">Intre timp pregatim si siropul de menta: se pune la fiert apa, iar in momentul in care da in clocot se adauga zaharul si apoi esenta de menta. Se lasa la racit. </span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">Montare: pandispanul se taie in bucati astfel sa formam crocodilul. Avem nevoie de </span><span style="font-family: 'Trebuchet MS', sans-serif;">o parte destul de mare in forma de semiluna pentru trunchi, </span><span style="font-family: 'Trebuchet MS', sans-serif;">o parte mult mai mica tot semiluna pentru coada, </span><span style="font-family: 'Trebuchet MS', sans-serif;"> o parte trapez mai alungit pentru cap, 4 parti mici pentru picioare.</span><br />
<span style="font-family: 'Trebuchet MS', sans-serif;"><br /></span><br />
<span style="font-family: 'Trebuchet MS', sans-serif;">Formam crocodilul, avand grija sa insiropam blatul bine si sa adaugam crema intre foi.</span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">Apoi restul de frisca , se bate bine cu putin colorant alimentar verde, ca sa-i dam culoarea potrivita fiorosului animal.</span><br />

<span style="font-family: 'Trebuchet MS', sans-serif;">Invelim totul in frisca, ii adaugam bezele pe post de ochi, adaugam bomboanele pe post de solzi si gheare/unghii, iar din fasii de bezele ii facem dintii. </span><br />

Intre timp ciolanul se taie in bucati si il fierbem si pe le in mai multe ape, ca sa se duca din sare si din afumatura prea grea. Dar nu in foarte multe ape, ca apoi nu mai da gust mancarii.</span><br />

Se fierb toate. Cand este gata, scoatem pastarnacul, telina cepele si morcovii. Cei din urma ii putem taia rondele si lasa in macare. Pentru gust presaram tarhon si frunzele de telina/leustean . Se serveste cu paine proaspata de casa si muraturi.</span><br />

Bucata de porc se curata cat se poate de bine, astfel sa lasam si putina grasime pentru gust. Intr-o tava ungem cu putin ulei si asezam carnea. O impanam cu usturoi , iar pe deasupra presaram din condimente. Ardeiul iute il punem deasupra.<br />

Dam la cuptor pana se rumeneste usor, din cand in cand mai verificam sa vedem in ce stadiu este sa nu se lipeasca sau sa se usuce prea rau. Daca este necesar putem pune si apa in tava, aceasta se va evapora cu timpul si in acelasi timp va infragezii carnea.<br />

Albusurile sa fie batute spuma.Doar cele 3 albusuri. Se amesteca toate ingredientele bine, lasand albusurile ultimele pentru a nu se strica. Se ia toata compozitia si se aseaza pe centrul foii de aluat ca in imaginea de mai jos. Dupa ce am asezat taiem marginile in 10-12 felii egale.</span></div>

<br /></div><div> <span class="Apple-tab-span" style="white-space:pre"> </span>Brânza se zdrobește cu o furculiță. Adăugăm ouăle apoi făina ,grișul și esențele și amestecăm totul bine. Se formează forme rotunde ca și gogoșile dar cu gaură in mijloc și unele care sa fie moț. </div><div> <span class="Apple-tab-span" style="white-space:pre"> </span>Din compoziția asta mie mi-au ieșit 2 papanași mari mari.</div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Pregătim o tigaie pentru prăjit, și prajim papanașii pe ambele părți.</div><div>

<br /></div><div>Merele le curatam de cotoare si le dam pe razatoarea mare. Le calim pe foc cu zaharul si scortisoara, apoi lasam la racit pana pregatim blatul.</div><div>

<br /></div><div>Pentru blat, frecam zaharul cu ouale foarte bine. Punem si zaharul vanilat. Dupa ce si-a dublat volumul incepem sa adaugam uleiul putin cate putin. Praful de copt il amestecam cu faina, si punem in castron alternand o lingura de faina cu una de lapte.</div><div> </div><div>
<br /></div><div>Intr-o tava asezam foaie de copt si turnam jumatate din compozitia pentru blat. Bagam la cuptor aproximativ 15 minute. Dupa ce s-a inchegat putin, asezam merele calite si imediat si cealalta jumatate de blat.</div><div>Mai lasam inca vreo 20-25 minute la cuptor. Putem face testul scobitorii ( o scobitoare curata o infingem in blat si cand nu se mai ia nimic pe ea, inseamna ca e bine copt).</div><div>

Batem cu telu ouale cu lapte si adaugam faina pana ajungem la compozitia dorita..nici prea moale nici prea groasa. Inainte de a le praji, adaugam o legatura de marar tocat marunt. Le facem in tigaie in mod obisnuit.</div><div><br /></div><div>Dupa ce le-am facut, pregatim si legumele. Dovlecelul eu l-am taiat felii subtiri rondele. Topim gelatina in cafeaua fierbinte apoi o lasam sa se raceasca. Intre timp batem frisca cu zaharul pana devine tare. </div><div><span class="Apple-tab-span" style="white-space:pre"> </span> Amestecam cafeaua cu gelatina cu frisca. </div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Mai dam la frigider pentru o ora ca sa se intareasca mai bine crema.</div><div><br /></div><div><span class="Apple-tab-span" style="white-space:pre"> </span>Blatul se taie in doua parti. Partea de jos o stropim cu putin coniac si o ungem cu gem. Apoi punem jumatate din crema.
